Orono Forest FarmPink Oyster Mushroom Bacon
Instructions:
Preheat oven to 375°F (190°C) and line a baking
sheet with parchment paper.
In a bowl, whisk together soy sauce, maple syrup,
liquid smoke, olive oil, smoked paprika, garlic
powder, pepper, and cayenne.
Tear Pink Oyster mushrooms into thin, bacon-like
strips.
Toss mushroom strips in the marinade until well
coated.
Arrange strips in a single layer on the baking sheet,
making sure they don't overlap.
Bake for 15 minutes, then flip each strip.
Bake for another 10-15 minutes until crispy and
edges are browned.
Let cool for a few minutes - they'll crisp up even
more as they cool!
Ingredients:
1 lb Pink Oyster mushrooms, torn into thin
strips
3 tbsp soy sauce or tamari
2 tbsp maple syrup
1 tbsp liquid smoke
1 tbsp olive oil
1 tsp smoked paprika
1/2 tsp garlic powder
1/4 tsp black pepper
Pinch of cayenne (optional)

Instructions:
Mix vegan mayo, chipotle, lime juice, and salt. Set
aside.
Heat olive oil in a large pan over medium-high
heat.
Add mushrooms and cook until they release their
moisture and start to brown, about 5-7 minutes.
Add cumin, paprika, chili powder, salt, and pepper.
Cook for another 2 minutes.
Warm tortillas and fill with mushrooms, cabbage,
and cilantro.
Drizzle with chipotle lime crema and serve with
avocado and lime wedges!
Ingredients:
For the mushrooms:
1 lb Blue Oyster mushrooms, torn into
strips
2 tbsp olive oil
1 tsp cumin
1 tsp smoked paprika
1/2 tsp chili powder
Salt and pepper to taste
For the crema:
1 to 3 chipotle peppers in adobo, to taste
1/2 cup vegan mayonnaise
Juice from 1/2 a lime
For serving:
Thinly sliced green and red cabbage
Fresh cilantro
Corn tortillas, warmed
Lime wedges
Diced avocado

Instructions:
Heat vegetable oil in a wok or large pan over high
heat.
Add garlic and ginger, stir-fry for 30 seconds until
fragrant.
Add Golden Oyster mushrooms and cook for 3-4
minutes until they start to crisp.
Add mixed vegetables and stir-fry for another 3
minutes.
Pour in soy sauce, sesame oil, and rice vinegar. Toss
everything together.

separated
3 cloves garlic, minced
1 tbsp fresh ginger, grated
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp rice vinegar
2 cups mixed vegetables (bell peppers, snap
peas, carrots)
2 tbsp vegetable oil
Sesame seeds for garnish
Green onions, sliced

Instructions:
Score a crosshatch pattern on both sides of each
mushroom round.
Season with salt and pepper.
Heat olive oil in a pan over medium-high heat.
Sear mushroom rounds for 3-4 minutes per side
until golden brown with a nice crust.
Remove mushrooms and set aside.
In the same pan, melt butter and add garlic. Cook
for 1 minute.
Add lemon juice and parsley to the garlic butter.
Return mushrooms to the pan, coat with the sauce,
and serve immediately!

4 tbsp butter
4 cloves garlic, minced
2 tbsp fresh parsley, chopped
1 tbsp lemon juice
Salt and pepper to taste

Cakes
Instructions:
Shred the Lion's Mane mushrooms into crab-like
pieces and sauté until golden and any moisture has
evaporated.
In a bowl, combine the cooked mushrooms with
breadcrumbs, mayo, mustard, Old Bay, green
onions, and lemon juice.
Form into patties and refrigerate for 30 minutes.
Pan-fry in oil until golden brown on both sides,
about 3-4 minutes per side.
Serve with tartar sauce and lemon wedges!

1 lb Lion's Mane mushrooms, shredded
1/2 cup breadcrumbs
1/4 cup vegan mayo
2 tbsp Dijon mustard
1 tbsp Old Bay seasoning
2 green onions, chopped
1 tbsp lemon juice
Salt and pepper to taste

Risotto
Ingredients:
1/2 lb mixed mushrooms (Lion's Mane, Blue
Oyster, King Oyster, Golden Oyster), chopped
1 1/2 cups Arborio rice
6 cups vegetable broth, kept warm
1 onion, finely diced
3 cloves garlic, minced
1/2 cup white wine
1/2 cup Parmesan cheese, grated
3 tbsp butter
2 tbsp olive oil
Fresh thyme
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
In a large pan, heat 1 tbsp olive oil and sauté
mushrooms until golden. Set aside.
In the same pan, heat remaining oil and 1 tbsp butter.
Add onion and cook until soft.
Add garlic and rice, stirring for 2 minutes until rice is
slightly toasted.
Pour in white wine and stir until absorbed.
Add warm broth one ladle at a time, stirring constantly
and waiting for each addition to be absorbed before
adding more (about 20-25 minutes total).
When rice is creamy and al dente, stir in the cooked
mushrooms, remaining butter, Parmesan, and thyme.
Season with salt and pepper.
Garnish with fresh parsley and extra Parmesan!

ginger to a pot.
Bring to a boil, then reduce heat and simmer
